When we opened our first location on 18th Ave. in Denver in 2015 we wanted our food to be as simple as possible, with a breakfast menu that reflected our exposure to Filipino, Chinese and Colorado-style Mexican food. We loved the story of when they asked Michelangelo how he carved David out of stone: "easy, I just took away everything that wasn't David."

We took the same approach with the original menu: bacon fried rice, breakfast burritos, congee, fresh squeezed OJ and locally roasted drip coffee. For the breakfast burrito: tortillas made traditionally with lard, potatoes fried in duck fat, green chili from chiles roasted nearby, cooked with real chicken stock. Then we sourced the best bacon and cheese we could find and called it a day. We did the same with the bacon fried rice and congee. The bacon fried rice is the personal one: a dish the owner ate weekly as a child. Onefold was the first restaurant in Colorado to make it.

We also wanted to make things the way they would have been made 100 years ago, so we only cooked in animal fats and were naturally seed oil free. After introducing some vegetarian items we started using avocado oil for those. When it came time to name the restaurant we came up with Onefold, the old English word for simple.

After a while we got bored and started making a weekly special. A decade and three locations later, a lot of those specials are on the menu permanently, along with a full bar and the espresso machine we finally came around on.
